Q. Perfect brew
A. Second level teaspoon of fresh coffee and six ounces of freshwater direct from tap water. Stored water pick up impurities on the container and loses oxygenation. The coffee maker must be clean; remove lime deposits in the pot by a strong solution of vinegar and water. The water is hot but not boiling. Remove the brew basket containing the grounds/residue/ashes at once. Do not hold the coffee in the brewer or hold plate for more than 45 minutes.
Q. Espresso
A. You need an expensive machine, tiny cups plus some Italian oracion. Better to go to Italy for the real McCoy of coffee: lungo, macchiato caldo/con la schiuma, latte, corretto, amaro, hag, doppio, cornetta, capuccino bolante, scuro.
Q. Ersatz class
A. Snobbish, bourgeois connoisseur use 1. Ethiopian and Sumatra blends, 2. Brazil with Venezuela, Guatemala Mexico beans. Cuban cigars, Davidoff, Gaulois, Turkish, cigarettes complete the fake posture.
Q. Filipino
A. Before the war, the best came from Batangas sometimes called barako.

A. Any Davao brand followed by Bukidnon’s Monk’s blend
Q. What is the best Davao Coffee?
A. They are mixed with roasted pure bugas mais and taken steaming scalding. The flavor taste/mystery/romance/changes when it becomes hot only. One fifth of the cup must be residue of black, powder, misty, sandy, fragrant soot. For Christians up to 1960s, Obo coffee means extra high super awareness, zinginess, 2 cups equals palpitation, a heart that quivers, quake and shake.
Q. Where can I get them?
A. They disappeared when Obo’s cut their coffee trees to make way for pineapples and bananas in the 1970s. The old folks brought with them the special styles, techniques, mixtures (even in washing the cups/pots) to their graves. The young generation prefer 3-in-1, 5-in-1, 8-in-1. Elias Lopez served the best Obo coffee in the poblacion until his death.
Q. Name Brands.
A. U.S. Nescafe, Sanka, Maxwell, Folgers tasters, Filipino 45, Puro, Jims.
Q. Exotic.
A. Musang (wildcats) eat both the berry coatings and the bean but its stomach only dissolves the coating so the dropping/shit is solid/coffee bean. Dizon is the only credible musang coffee producer/seller in the Philippines because he is the only one with live musangs in his farm. (Kopi Luwak in Malay).
Q. Institution with biggest coffee drinkers.
A. U.S. military, during second war, 14 million Americans were in the navy army air force, etc. percentage-wise, from 1942 to 1945, the world’s best coffee (from Brazil) went to the American soldiers together with the world’s best chocolate, cigarettes, chewing gum. That’s how the American public love their military, only the best for our G.I.’s.
